I have had discussions with others about this and am up in the air as there
are valid points for both. Some say the host should be run in a workgroup as
if the domain controller goes down you cannot log into the host. While
others say if you have several domain controllers (more than one) then add it
to the domain. I would like to use P2V but you can only do that if your host
is in a trusted domain vs. a perimiter network.

So my question, is there a best practice for domain or workgroup for the
host machine?

If you have a single DC, and it's a child VM on the same physical box as the
parent, then you really don't want the parent to be domain joined. It can
get messy.

If you have a second DC, and it's on a different physical box? Domain
joined, for sure.
