install VS 2005 R2SP1 Ent x64 but then found out our P2V migration tool only
supports VS 2005 R2SP1 Ent x86.

Is it feasible, and MS-supported, to install and use the x86 version of VS
2005 R2SP1 on my x64 OS, or should I re-install from scratch using the x86 OS
version?

If you are running a 64-bit OS on the host, you need to install the
64-bit version of Virtual Server. This is a 32-bit application but it has
the necessary 64-bit drivers.

P2V migration is a different matter. In Virtual Server only the 32-bit
guest OS is supported, so your P2V migration tool is what you need.
