We have a situation where running IIS on a virtual server would be ideal. Is
it possible to show a virtual server on the internet? I'd still need to be
able to access the system from the internal network as well. So I could
assign a routable IP to the second NIC on the host and create a second NIC
with another routable IP on the VM. Would that work?

All you really need is a dedicated NIC on the Host system that is connected
to the DMZ. Make sure that TCP/IP, File and Print Sharing and Client for
Microsoft Networks are unchecked. The only thing that should be left check
for this adapter should be Virtual Machine Network Services. This will
ensure that the NIC is isolated only to the VM layer and not to the Host OS.
ths holds true for other NICs too that may be connected to other subnets.
Our rule is, anything used for guest traffic should only have the Virtual
Machine Network Services selected. Then on another NIC do the opposite.
Uncheck the Virtual Machine Network Services. This NIC will be used to
connect to your Host and subsiquently VMRC and VMWeb connections so that you
can access your hosts. You can also open up ports in your firewall to allow
direct RDP session from the inside network to your IIS DMZ server too.

Thats how we do it.
