Installed Server 2003 on a VPC

I have a general question which I am sure has been answered before but...

I work in a business environment which has the servers locked down. I am in
need of the ability to install VPC, Windows 2003 server and SharePoint Server
2007. And be able to test its capabilities and functionality locally only
and then promote to the server team.

I would like to set up a small test lab type scinerio...
* Install VPC on my laptop (done)
* Install Server (std) 2003 onto VPC (done)
- Do I need DHCP, Active Driectory etc installed? (not done)
* Install SharePoint Server 2007 onto VPC's OS (not done)
- Have SharePoint only visible to the Host machine (i.e. my laptop)
(if the server team see the instance on the net I will get shut down)
